You can make any type of club, to start there is a diverse options of clubs in the Club House, why not look at the open ones and then take a look at the ones that aren't open due to them not paying the monthly club fee or the founder is just inactive? You can take inspiration from them!
For starters I made my own OSSRA (fitting title I know) club, which is just the Racing Discipline but I'm an inspiree (not a word, but I make new words when I write my books!) of Flat Racing so it makes sense for me to have a horse racing-type of club. Also its OSSRA because its Onceler Schematics Stables' Racing Association. I put my own stables into the title because it fits and it shows what I want to do and what to provide for.
Also, I love horse racing so I covered a tiny portion of horse racing in my club's description when you join (you don't actually have to join, it's just an example), it did start in the 1700s but it really started with the indians and the quarter horses (or appaloosas or american paint horses, sometimes I think QHs).
I love deep research when it comes to horse racing, also there are various different types of horse racing: Skijoring (just like Steeplechasing but pulling a skier instead and during the winter), National Hunt Racing, Endurance Racing, Harness Racing, Jump Racing, Steeplechase Racing, Quarter Horse Racing, Allowance Racing, Claiming Racing, Handicap Racing, Maiden Racing, and so on!
Allowance, Claiming, Handicap, and Maiden Racing are for the lower levels of horses that haven't won a race, are being sold, collect money, or something. Maiden and Handicap Racing are for the youngsters that haven't won a single race, its restricted for new Racehorses and those alike that want to enter into their first race. Pretty interesting, considering I've only focused on the big races like the Triple Crown.
But that's only me. For you, there's various types of disciplines and sub-disciplines (similar types but are classified under the same discipline despite being different), there is no telling what discipline to suggest you can cover, as there's almost anything you can make into a club. But if we're focusing on EV clubs, then there's not much, you can make whatever comes to your mind.
Yet, I do suggest looking at the various clubs in the Club House to get a good idea of what you want to do, though, the option to go buck wild is in you're hands after all. There's no telling what you can and can't make (actually, yes, there is but its fine), though the racing discipline is mainly popular because.. you can watch horses battle each other by running around a track, similar to Nascar but with horses instead and less danger of crashing into each other.
