Rare QH Colour(s)??

Does anyone know what colour(s) are the rarest in the QH breed?

I’m currently breeding QH and want to breed more interesting colours

I breed Quarter Horses, so I'll be able to help you. 
Generally with Quarter Horses and much like most other breeds in EV, horses with a gene modifier are considered rare, such as silver and flaxen (quarter horses don't get sooty, or pangare). 
As for the base coat, seal brown would be rarer than the other coats like chestnut or bay.
It is worth noting that horses with cream genes (either double or single creams) such as buckskin, seal brown cream, or double creams like perlino and cremello although not very rare, would fetch a higher price as compared to chestnuts or bay. 
Anything with dun would also be considered rare, such as red dun or brown dun, however, those that are cremello dun or smokey cream dun are much rarer. 
Then there is champagne which is probably the rarest of them all, I have a few champagne duns and there aren't many of them around. 
It is worth looking at this which is a genetic guide and tells all the possible color combinations that are available for each breed.

There is also the Moreno which is usually rarer in all breeds that carry the colour and quarter horses do.
