Thank you all for the suggestions. After I posted, a friend and I decided to team up like we had in the past and then let that line fade away. With considerations to color availability, markings, and popularity, we've chosen to do...

Paint Horses! We had been looking at doing Shetland Ponies... until I looked at their Pinto markings and am not a fan of those ones. So it ruled the poor Shetties out of the running.

We won't be doing Western like a majority of Paint breeders, we'll be going with Dressage Paints. Why? Because who doesn't love a fancy ol' pinto Dressage pony!

The discipline changer states "When you convert your horse's training, the specialty will change to whatever you choose, and the horses earned stats will be divided evenly between the two main stat groups for that discipline.".

I recommend Vanners because they are beautiful, and are gathering quite the following due to their gorgeous new breed art and the fact that we gained a whole bunch of new colors and markings! Fun on a bun!

Breed Suggestion: GVs!
Recommended Discipline: Driving is the default, but there's a growing number of us who do Dressage. one of us, ONE OF US
Your desired colors: Everything, all the colors! Right now, from what I've seen, the 'in' colors seem to be the creams, duns and browns. That might just be because they're so new and shiney, but I can see that sticking.
Why do you recommend this breed: Just go through someone's division that's filled with new or re-colored GVs. The new explosion of colors has given us a genetic rainbow on top of some really lovely art. Also, it's always nice to have more people around to help out with the general gene pool of the breed and specialty.

If I did GVs I'd definitely have to go to something other than Driving, as that's what my minis are and trying to keep different disciplines xD

Come to the Dressage side! I remember seeing a few people mention they have theirs in Show Jumping. Never looked for or heard anything about anyone doing Endurance or Western, though I'm sure there's people doing it.

Haha yea, GVs jumped up to the top with the recode, I think it has to do with that art that is stunning. I love the art, but some of the colors throw me off xD

Your desired colors: Anything but grey ^.^ The smoky colors are super gorgeous and we gained dun and grullo/a in the recode as well as Rabicano
Why do you recommend this breed: We need more people who are willing to share decent lines and I am willing to share mine with anyone who wants to get into the breed and is an active player (I don't like to see my babies sent to the RC a week after I sell/trade them).
